Hepatitis C Diet Low Sodium Chili. I love spicy food! Due to esophageal varices I have to be cautious, but I still LOVE chili. I was bound and determined to make a Hepatitis C Diet low sodium chili. I love it on a hot dog, with pasta (three-way chili), with low sodium corn chips (loso Frito pie), or all by itself. I usually make a big batch and keep it in the fridge. I freeze some too for when I don’t want to cook. My family even loves it so I have it when the kiddos come over. Who says liver loving is boring? Forget that mega-sodium canned stuff! Put this on and let it simmer a while… Where I live, it’s a must have especially on Oklahoma University football game days.

Low Sodium Chili

2 lbs ground meat (lean beef, turkey, bison, or a mixture of all)

2 cans loso diced tomatoes

2 cans tomato sauce

1 can each of NO sodium pinto beans, chili beans, kidney beans (add more if desired)

1 pkg Williams Chili Seasoning (it’s always NO sodium)

Some chopped onion (you decide)

Frito Pie

Brown ground meat with ½ the Williams seasoning. Throw it all in the pot with the rest of the seasoning and cook a few hours. Add water if it cooks down too fast. That’s it. I told you I was a lazy cook. Heck, I’ve got stage 4 cirrhosis! I do NOT slave over a stove! Haha.

OK – here’s a cheat for when I’m really wiped out. I get a can of William’s low fat turkey chili and add 3 cans of beans and ½ packet of seasoning. There is still a lot of protein, but the sodium content remains low. It’s good! I keep those ingredients in my cabinet at all times. Low Sodium Chili cannot be beat!

Frito Pie – Some have told me they never heard of a Frito Pie, so I researched it. Daisy Dean Doolin, the Frito Lay founder’s mother supposedly came up with the idea originally. In Oklahoma we were raised on them! At most drive up mom and pop fast food places, they took a bag of Frito’s and smashed the bag. Then they slit the side and put mustard, chili, onions, and cheese right in the bag. We carried them right out with a spoon and a napkin to keep from burning our hands. Now we make them at home using no sodium mustard and low sodium Frito Chips. Thanks for cutting the salt Frito Lay!
